Butter chicken — murgh makhani — is the most recognised dish in East Indian cooking, and at Charisma Of India it has been on the menu for as long as we have been feeding West Broadway. The chicken is halal, bone-free and marinated in yogurt with ginger, garlic and warm spices before it ever meets the gravy.
Because the chicken is roasted in the clay tandoor first, every piece carries a little smoke and char into the sauce. The makhani gravy itself is built slowly from tomatoes, butter, cream and garam masala, then finished with crushed fenugreek leaves for that unmistakable sweet-savoury edge. It is mild enough for children and first-timers, and we are happy to take the heat up if you like your curry with more of a kick.
